Job Summary

Western's Smokehouse & Meat Market, LLC is seeking a skilled Meat Processing Technician to join our team. As a key member of our production team, you will be responsible for ensuring the highest quality products are produced while maintaining a safe and efficient work environment.

Key Responsibilities
  • Pre-Operational Inspections: Conduct thorough pre-op inspections of machines, room, and other equipment used in the production process to ensure they are in good working condition.
  • Inventory Management: Maintain accurate inventory records, rotate spice, meat, and other product racks to guarantee a first-in, first-out (FIFO) inventory system, and scan raw ingredients into Vista Trac to safeguard against input shortages.
  • Product Preparation: Weigh the correct amount of raw materials for the batch, grind raw materials to precise stipulations, and change out and set up machines to the correct specifications for each customer.
  • Cleaning and Sanitizing: Thoroughly clean and sanitize equipment/room, and keep the floor clean of debris and throw away in the proper container to prevent contamination.
  • Quality Control: Verify the correct v-mags and load them into the stuffer, inspect to ensure quality, and verify the information on labels and racks to ensure accuracy of product naming and quality.
  • Documentation: Document information accurately on all paperwork to provide accurate records for review.
  • Teamwork: Assist in other departments as needed and assume responsibilities of other Process Technicians, Process Managers, and Receiving Managers in their absence.
Requirements
  • Education: High School Degree or equivalent.
  • Experience: Food safety experience preferred.
  • Skills: Excellent communication skills, ability to add, subtract, multiply, and divide, and general knowledge of computers and calculators.
  • Physical Demands: Ability to stand for 8 hours, lift 50+ lbs repeatedly, and work in a cold environment.
