Culinary Director

We are seeking an experienced and skilled Executive Chef to join our team at Yaamava' Resort & Casino at San Manuel. As a key member of our culinary team, you will be responsible for overseeing the daily operations of our kitchen, ensuring the highest quality of food and service, and leading a team of culinary professionals.

• Menu Development and Execution
  • Develop and implement menus that meet the needs and expectations of our guests
  • Ensure that all menu items are prepared to the highest standards of quality and presentation
• Kitchen Operations
  • Oversee the daily operations of the kitchen, including food preparation, cooking, and presentation
  • Ensure that all kitchen staff are properly trained and equipped to perform their duties
• Staff Management
  • Recruit, train, and develop a team of culinary professionals
  • Provide guidance and support to kitchen staff to ensure they are meeting the highest standards of quality and service
• Financial Management
  • Manage the kitchen budget and ensure that all financial goals are met
  • Monitor and control food costs, labor costs, and other expenses
• Health and Safety
  • Ensure that all kitchen staff are aware of and follow health and safety protocols
  • Investigate and report any incidents or accidents in the kitchen

• Education
  • Associate's degree in Culinary Arts or related field
• Experience
  • Minimum 4 years of experience in high-volume production, catering, and multi-unit aspects
  • Minimum 3 years of management experience in high-volume production, catering, and multi-unit aspects
• Skills
  • Proficiency in Microsoft Office (Word and Excel)
  • Ability to handle high-volume a la carte kitchen cooking or high-volume catering/banquet production

  • ServSafe certification
• Licenses
  • Gaming license (at the discretion of the San Manuel Tribal Gaming Commission)
