As a key member of our culinary team, the Executive Chef will oversee the development and implementation of menus for our restaurants, ensuring exceptional quality and consistency. This role requires a strong leader who can motivate and train staff to meet high standards of food safety and presentation.
Key Responsibilities- Develop and implement menus that meet strategic food costs, specifications, and recipes.
- Ensure food quality and presentation meet established departmental standards.
- Establish controls to minimize food cost and supply waste.
- Develop and maintain standard recipes and techniques for high-quality, consistent food preparation, presentation, and taste.
- Prepare and cook food to order, following established recipes and procedures.
- Monitor and maintain inventory levels of food and supplies.
- Oversee cleanliness and sanitation of the kitchen and equipment.
- Train and develop kitchen staff, ensuring they adhere to safety and quality standards.
- Collaborate with other departments to ensure excellent customer service.
- Maintain a positive and professional working relationship with all staff members.
- Manage the kitchen operation and supervise staff.
- Provide training and resources to ensure the culinary team is set up for success.
- Conduct regular meetings with cooks and sous chefs to keep them informed and educated.
- Guide and supervise all aspects of the culinary operation, delegating responsibilities as needed.
- Monitor equipment quality and continuously work on operation efficiencies.
- Ensure safety standards and sanitary requirements are always met.
- Ensure banquet events are fulfilled timely and accurately, communicating with necessary parties.
- Valid Food Handler's Certification is required.
- Must be able and willing to get ServSafe Manager certified within 30 days of employment.
- Proven experience as a sous chef or similar role in a high-volume restaurant.
- In-depth knowledge of culinary techniques and cooking methods.
- Strong leadership and communication skills.
- Ability to work in a fast-paced environment and manage multiple tasks simultaneously.
- Excellent time management and organizational skills.
- Ability to work well under pressure and meet deadlines.
- Knowledge of food safety regulations and kitchen sanitation standards.
- Ability to stand for long periods and lift heavy objects.
- Knowledge of Health Department regulations and perform monthly health inspections.
- Ability to analyze and problem solve effectively.
- Ability to multitask multiple projects simultaneously and prioritize work.
- Bilingual: the ability to communicate in both English and Spanish is required.
- Ability to work collaboratively with a team of professionals.
- Self-motivated and able to work independently.
- Ability to work with chemicals safely and ensure staff follows safety procedures.
- Ability to wear protective equipment such as goggles, apron, gloves, boots, etc.
- Strong administrative skills and experience in writing reports, schedules, evaluations, and Excel spreadsheets.
- Ability to perform all duties to company standards and meet all physical requirements.
- Flexibility with schedules, holidays, evenings, and weekends.
- Ability to handle positive or negative guest or coworker interactions by communication and effectively resolve any situation.
- Ability to use Stratton Warren ordering system effectively.
- Ability to speak publicly in front of a large crowd with professionalism.
- Ability to perform a health inspection to Federal, State, and FDA requirements.
- Ability to perform banquet events for VIP guests or large outdoor events.
If none of the applicants meet the stated qualifications, applicants with education and experience less than the stated requirements may be interviewed and hired, provided the applicant submits a formal written training plan within 30 days, which can be completed within a reasonable time agreed upon by the supervisor and the applicant. Applicants who are hired and fail to meet the agreed-upon formal training program will be discharged upon failure to complete the specified training as scheduled.
This position requires a background, finance, and drug screening. You will be required to provide two years' worth of tax returns, 12 months of bank statements, and have no felony or theft in your criminal history. If any of the gaming requirements are not met, it will result in the applicant being denied a gaming license.
