Cutting Procurement Specialist

We are seeking an individual to join our team at Golden Corral as a Meat Cutter. As a key member of our food production team, the Meat Cutter's performance and ability to cut for quality and quantity of product have a significant impact on the guest's dining experience.

Our team is dedicated to providing top-quality meat cutting to optimize profit and ensure that our guests receive full value in both product and service. We are looking for an individual who is energetic, friendly, and focused on delivering exceptional results.

The successful candidate will be responsible for:

Food Production

• Cutting meat according to product specifications and time standards.
• Completing the use and following of the buffet production system to ensure quality and shelf life compliance.
• Rotating cut and boxed meat to ensure freshness.
• Stocking and arranging the Meat Cooler in accordance with approved food safety guidelines.

Cleanliness

• Sanitizing all surfaces between production of chicken and any other meat to eliminate cross-contamination.
• Recognizing and removing bad meat, characterized by stickiness, slickness, or unpleasant odors.
• Cleaning and sanitizing the meat room according to cleanliness, service, and quality standards.
• Following local health department laws and regulations.

Operational Excellence

• Maintaining an inventory of all meat products using administration forms.
• Notifying the Manager of any discrepancies in product or equipment.
• Performing opening and closing administrative procedures.
• Maintaining equipment according to the Equipment Maintenance manual.
• Completing duty roster tasks.
