About the Role

We are in search of a skilled and enthusiastic Lead Culinary Specialist to become a vital part of our dynamic kitchen team.

As a Lead Culinary Specialist, you will be instrumental in assisting the Head Chef with the comprehensive management and operation of the kitchen.

You will ensure the highest standards of food quality, presentation, and kitchen efficiency. Additionally, you will oversee and mentor junior kitchen staff to maintain a cohesive and productive team environment.

Key Responsibilities
  • Assist the Head Chef in menu development, recipe creation, and food costing.
  • Supervise daily kitchen operations, including food preparation, cooking, and plating.
  • Train, manage, and schedule kitchen staff to ensure a smooth workflow and adherence to recipes and standards.
  • Monitor inventory levels and procure supplies as necessary to maintain stock levels and minimize waste.
  • Ensure compliance with food safety and sanitation regulations.
  • Maintain cleanliness and organization of the kitchen, including equipment upkeep and sanitation.
  • Assist in creating and implementing new menu items, specials, and promotions.
  • Collaborate with front-of-house staff to ensure seamless service and guest satisfaction.
  • Address any kitchen-related issues or emergencies that may arise during service.
  • Exemplify a positive and professional demeanor while leading by example in teamwork, communication, and culinary excellence.
  • Understand various cooking methods, ingredients, equipment, and procedures.

Skills & Qualifications
  • Proficient in various computer programs (MS Office, POS).
  • Manage and control in-house stock to achieve set GP's.
  • Delegate tasks to kitchen staff effectively.
  • Inform wait staff about daily specials.
  • Ensure appealing plate presentation.
  • Supervise kitchen staff and assist as needed.
  • Adjust recipes to meet customers' needs and requests (e.g., reduce salt, remove dairy).
  • Monitor food stock and place orders.
  • Ensure compliance with all health and safety regulations within the kitchen area.
  • Ability to remain calm and undertake various tasks.
  • Excellent time management skills.
  • Up-to-date knowledge of cooking techniques and recipes.

Working Hours and Environment

The role is full-time, requiring flexibility for weekends and holidays.

Due to the seasonal nature of the business, there will be a requirement to work longer hours during peak seasons and fewer during off-peak months, averaging around 40 hours per week throughout the year.
