Banquet Chef

Congressional Country Club, a renowned Platinum Club, is seeking a highly skilled Banquet Chef / Catering Operations professional to lead our culinary team. As a leader in the culinary industry, we pride ourselves on delivering exceptional dining experiences to our members and guests.

• Lead the banquet culinary team, including cross-training and promotion of team members.
• Develop and execute menus for banquet operations, special occasions, and events.
• Select, train, supervise, schedule, and evaluate the Banquet Team.
• Assist in planning and developing menus for the club, considering factors such as product availability, food cost, and service standards.
• Control labor and operating expenses through effective planning, budgeting, and purchasing decisions.
• Ensure high standards of sanitation, cleanliness, and safety are maintained throughout kitchen areas.
• Safeguard food-preparation employees by implementing training on safety, sanitation, and accident-prevention principles.
• Attend food and beverage staff and management meetings.
• Consult with the banquet function committee on food production aspects of special events.
• Cook or directly supervise the cooking of items that require skillful preparation.
• Interact with food and beverage managers to ensure food production consistently exceeds member and guest expectations.
• Assist in planning and managing the employee meal program.
• Establish and maintain a regular cleaning and maintenance schedule for all banquet kitchen areas and equipment.
• Host taste panels to assess the feasibility of proposed menu items.
• Establish buffet presentations and standards.
• Understand and consistently follow proper sanitation practices, including those for personal hygiene.
• Undertake special projects as assigned by the Executive Chef / Executive Sous Chef.

• Exceptional cooking skills.
• Plans menus with the Executive Chef for all Club Events.
• Maintains food quality and sanitation standards.
• Knowledge of and ability to perform required roles during emergencies.

• Bachelor's degree in culinary arts and/or other Hospitality Management degree and 5 years' food production and management experience; or
• 7 years' relevant experience; or any equivalent combination of experience and training that provides the required knowledge, skills, and abilities.
