Position Overview

As a Food Services Manager, you will play a crucial role in overseeing the operations of our culinary department. Your responsibilities will include:

Operations Management

• Recruiting, interviewing, hiring, training, coaching, evaluating, rewarding, and, when necessary, terminating staff members.
• Developing job descriptions and responsibilities for each level of foodservice personnel.
• Creating work schedules to ensure adequate staffing for each shift.
• Establishing and monitoring budgets to maintain a cost-effective program.
• Managing revenue-generating services.
• Utilizing forecasts, food waste records, inventory, and equipment records to plan purchases of food, supplies, and equipment.
• Justifying improvements in departmental design and layout.
• Collaborating effectively with clients, facility staff, physicians, consultants, vendors, and other service providers.

Foodservice Management

• Setting standards and procedures for food preparation.
• Participating in menu planning, addressing client preferences, substitution lists, therapeutic diets, and industry trends.
• Inspecting meals to ensure standards for appearance, taste, temperature, and serving times are met.
• Overseeing the preparation and service of special nourishments and supplemental feedings.
• Ensuring food is prepared according to production schedules, menus, and standardized recipes.

Food Safety

• Ensuring safe receiving, storage, preparation, and service of food.
• Protecting food throughout all phases of preparation, holding, service, cooking, and transportation, in accordance with HACCP Guidelines.
• Preparing cleaning schedules and maintaining equipment to uphold food safety standards.
• Ensuring proper sanitation and safety practices among staff.

Nutrition and Medical Nutrition Therapy

• Processing new diet orders and modifications; keeping diet cards current.
• Completing assigned MDS sections within required timelines.
• Assessing client dietary needs and developing appropriate dietary plans in collaboration with registered dietitians and in compliance with physicians' orders.
• Reviewing care plans related to nutritional status and documenting concerns for improvement.
• Collaborating with the interdisciplinary team to review, revise, and implement the client's nutrition assessment and care plan.
• Supporting registered dietitian duties as necessary.

Essential Skills and Qualifications

• Proven ability to motivate, coach, and supervise foodservice personnel.
• Intermediate computer proficiency.
• Strong mathematical and numerical skills; mechanical aptitude is advantageous.
• Excellent written and verbal communication skills.
• Demonstrated organizational capabilities.
• Current knowledge of legislation and regulations affecting standards of care.

Physical Requirements

• Ability to lift and carry over 50 lbs.
• Capacity to endure extreme temperatures, both hot and cold.
• Willingness to work extended hours, including evenings, weekends, and holidays as needed.
• Ability to interact positively with individuals of all ages.

Qualifications
  • High school diploma or equivalent required.
  • Minimum of 2 years of experience in food service management.
  • Certification from the Association of Nutrition and Food Service Professionals.
  • Completion of a Certified Dietary Manager Exam.
