Job Title: Sushi Chef
Department: F&B - Kitchen
Reports To: Executive Sous Chef
FLSA Status: Non-Exempt

JOB SUMMARY

The Sushi Chef is responsible for the preparation and presentation of sushi dishes in an appealing and standardized manner. This role involves coordinating individual orders and maintaining active communication with both front and back of house staff to ensure a dining experience that surpasses guest expectations.

ESSENTIAL DUTIES AND RESPONSIBILITIES
  • Arrives at work punctually and in the designated uniform.
  • Adheres to all company policies and procedures.
  • Prepares menu items for the designated work station and assists colleagues as necessary.
  • Completes all daily tasks before and after the shift.
  • Addresses all guest needs throughout the meal to ensure a positive dining experience.
  • Maintains high standards of appearance and sanitation daily, promoting safe practices among kitchen staff.
  • Facilitates communication between the Chef, Kitchen, Bar, and Dining Room.
  • Responds promptly and effectively to any issues that arise.
  • Handles guest inquiries and concerns with professionalism.
  • Engages with guests in a friendly and positive manner.
  • Maintains direct and ongoing communication with co-workers, management, and other departments.
  • Takes orders from customers.
  • Completes and serves orders at the sushi bar.
  • Cleans food preparation equipment and work areas, including counters and tables.
  • Follows all sanitation regulations diligently.
  • Stays updated on kitchen safety protocols and adheres to them.
  • Exhibits courtesy, friendliness, and helpfulness towards customers and team members.
  • Wears appropriate non-slip footwear.
  • Prepares all food according to established guidelines.
  • Performs other duties as assigned.

QUALIFICATIONS

EDUCATION and/or EXPERIENCE

A high school diploma or equivalent (GED) along with two years of relevant work experience and/or training demonstrating competence in kitchen operations, fish filleting, and sushi preparation is required. The ability to understand simple instructions, memos, and training materials is essential. Customer service must be prioritized, and candidates should be dependable, motivated, and capable of following instructions to complete tasks in a timely manner.

LANGUAGE SKILLS

Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other Team Members of the organization. Must possess the ability to interact pleasantly with guests and other employees, maintaining good working relationships.

TECHNICAL SKILLS

Ability to learn and master all required sushi recipes. Must demonstrate proficiency in using all kitchen equipment and basic kitchen/sushi techniques. Must be capable of multitasking, such as cooking several orders simultaneously while following the Chef's directions.

REASONING ABILITY

Ability to apply common sense understanding to carry out instructions provided in written, oral, or diagram form. Ability to address problems involving several concrete variables in standardized situations.

OTHER QUALIFICATIONS

Must possess excellent presentation skills and strong interpersonal abilities. Familiarity with sanitation standards for restaurants is essential.

CERTIFICATES, LICENSES, REGISTRATIONS

While employed, a valid and active Blue Lake Tribal Gaming Commission License must be maintained.
