Key Responsibilities:

  • Lead the kitchen team in the absence of senior chefs, ensuring seamless execution of events and maintaining high standards of quality and service.
  • Collaborate with the Chef to develop innovative and appealing banquet menus that meet the needs of our guests and exceed their expectations.
  • Train, teach, and mentor hourly cooks and stewards to ensure they have the skills and knowledge required to deliver exceptional service.
  • Organize and execute daily production and prep lists, ensuring that all ingredients and supplies are available and in good condition.
  • Assist with ordering products and ensuring availability for banquet events, maintaining strong relationships with suppliers and vendors.
  • Attend meetings as needed to stay informed about upcoming events and to provide input on menu planning and kitchen operations.
  • Maintain cleanliness and organization of coolers and freezers, adhering to strict health and safety standards.
  • Cover, date, and store leftover products, minimizing waste and ensuring that all food is used efficiently.
  • Prepare food according to prescribed recipes and standards, maintaining high levels of quality and presentation.
  • Serve items according to established portion and presentation standards, ensuring that all guests receive exceptional service.
  • Assist in other areas of the kitchen as needed, demonstrating flexibility and a willingness to support the team.
  • Set up, maintain, break down, and clean workstations, maintaining a clean and organized environment.
  • Maintain a clean workstation, proper sanitation, and follow food handlers' standards, ensuring a safe and healthy environment for guests and team members.
  • Notify the managing Chef of expected shortages, ensuring that all necessary steps are taken to prevent disruptions to service.
  • Maintain security and safety in work areas, adhering to strict protocols and procedures.
  • Maintain a neat, professional appearance and observe personal cleanliness rules, setting a positive example for the team.
  • Adhere to state and local health and safety regulations, ensuring that all practices and procedures are compliant.
  • Demonstrate and promote a safe and secure environment for guests, team members, and hotel assets, prioritizing the well-being of all.
  • Create a positive and productive working environment, fostering a culture of respect, teamwork, and open communication.
