We are seeking an experienced Executive Chef to join our team at the Clovis Civic Center. As a key member of our culinary team, you will be responsible for managing the daily operations of our kitchen, ensuring exceptional food quality, and providing a positive and compliant work environment.
Key Responsibilities- Manage and develop a team of 35 full-time and part-time culinary employees, including hiring, training, and performance management.
- Ensure event staff are aware of workplace expectations and provide ongoing assistance, training, and mentoring to promote a positive and enthusiastic work environment.
- Control labor costs through effective scheduling, cross-training, and development of employees, and monitor breaks and break documentation for kitchen staff.
- Oversee the purchasing and preparation of all food products to meet Oak View Group's standards of quality and consistency, and develop menus that meet quality, consistency, and style requirements.
- Supervise all line set-up, prep, and breakdown activities, and coordinate the storage, maintenance, and repair of all kitchen equipment.
- Coordinate the delivery and set-up of catered services and food service areas as needed, and arrange and manage kitchen staff skills training and development.
- Maintain a positive and compliant employee relations climate, and ensure compliance with health, sanitation, safety, and employment regulations.
- Ensure proper kitchen record keeping and administrative requirements, including food inventories and invoicing of food products.
- Minimum of 2-3 years of kitchen management experience in a full-service restaurant or events venue.
- Demonstrated track record of meeting projected costs and maintaining a positive and compliant employee relations climate.
- Professional appearance and presentation required, with knowledge of and skill in using computer software, including MS Word/Excel/Outlook.
- Maintains a current Food Handler's card and alcohol service permit if required by state or local government.
- Working knowledge of employee scheduling in a hospitality environment and ability to obtain and maintain certification in a nationally recognized sanitation program.
- Ability to positively interact with diverse personalities, including co-workers, subordinates, guests, and purveyors in a variety of work situations.
