Job Summary

We are seeking a highly skilled Sushi Cook to join our team at The Greenbrier Hotel. As a Sushi Cook, you will be responsible for preparing and cooking sushi, sashimi, and other Asian dishes to the highest standards of quality and presentation.

Key Responsibilities
  • Prepare and cook sushi, sashimi, and other Asian dishes according to recipes and specifications
  • Handle line assignments and station prep and service
  • Mis en place and check equipment and supplies
  • Assign or delegate work to ensure food production meets benchmarked standards
  • Benchmark and develop seasonal dishes and menus, and implement processes and procedures for consistency
  • Provide exceptional customer service and coordinate logistics for events and functions
Secondary Responsibilities
  • Organize, sanitize, and maintain kitchen equipment and areas
  • Develop and implement safe, sanitary, and efficient work habits and team spirit
Requirements
  • 5 years of experience in food production at The Greenbrier or similar facility, or completion of 3 years Culinary Apprenticeship
  • Catering experience preferred
  • High School Diploma or G.E.D. plus experience, or A.O.S. or A.S. Degree in culinary arts plus 3 years experience
  • West Virginia Food Handler's Permit
  • Excellent work ethic, time management, and organizational skills
  • Ability to lead a highly motivated team and work quickly and efficiently in a fast-paced environment
Working Conditions
  • 6 days per week, 8-10 hours per day, with varying days off and hours
