Smokehouse Operator Job Description

**Job Summary:**

Bilinski's Sausage Mfg. Co. is seeking a skilled Smokehouse Operator to join our team in Cohoes, NY. As a key member of our production team, you will be responsible for ensuring the efficient and safe operation of our smokehouses.

**Responsibilities:**

* Roll large carts of hanging sausages into and out of smokehouses, maintaining a safe and organized workspace
* Monitor and record cook times and temperatures, ensuring compliance with quality and safety standards
* Track and record chill down time and temperatures, maintaining accurate records
* Rotate racks of product efficiently to meet production demands
* Collaborate with room supervisors to coordinate daily schedules and production plans
* Clean and inspect smokehouses and surrounding areas before and after production
* Work in both hot and cold conditions, adapting to changing environments
* Fill in for other key positions as needed, demonstrating flexibility and teamwork

**Compensation and Benefits:**

* Competitive hourly rate, increasing to $23 after 90 days
* Additional $1 shift differential for Saturday work
* Comprehensive benefits package, including paid time off, medical and dental insurance, and Simple IRA match

**Work Schedule:**

* 6am-4pm, with mandatory overtime as needed
* Saturday shifts required

**Requirements:**

* Ability to work in a fast-paced production environment
* Strong attention to detail and ability to follow safety protocols
* Excellent communication and teamwork skills
* Ability to lift and move heavy objects, as needed
