Job Summary

We are seeking a skilled Cook III to join our culinary team at Viejas Casino. As a key member of our kitchen staff, you will be responsible for preparing and cooking food orders to the highest standards of quality and presentation.

Key Responsibilities
  • Prepare and cook food orders, including meat, fish, poultry, and related items, according to prescribed menus or recipes.
  • Maintain high standards of quality and appearance for all food prepared and served.
  • Ensure proper storage of product by checking storeroom, walk-ins, freezer, and other areas to ensure maximum product shelf life is maintained.
  • Stock and maintain proper inventory level of food supplies, ingredients, and other consumables on the menus.
  • Understand and practice food safety and sanitation procedures.
  • Ensure that a clean, safe, hazard-free work environment is maintained.
  • Comply with company and departmental policies and standard operating procedures, and applicable governmental laws and regulations.
Requirements
  • 4 to 5 years of restaurant production/cooking experience required.
  • 2 to 3 years of fine dining experience preferred.
  • Previous working knowledge of Point of Sales (POS) system preferred.
  • Food Handler's Card must be obtained before commencing duties.
