Job Overview:

The Culinary Operations Supervisor is responsible for overseeing the daily functions within the kitchen to ensure smooth operations and adherence to quality standards. This role requires exempt associates to dedicate their workday to fulfilling job responsibilities effectively.

Exempt managers are expected to regularly direct the work of at least three full-time staff members or their equivalents. The primary responsibilities should involve administrative, executive, or professional tasks for more than 50% of the time, and the role must also include the use of discretion and independent judgment for over 50% of the time.

Key Qualifications:

  • High School Diploma or equivalent, with a minimum of 2 years of experience in kitchen maintenance, operations, or a related field, including at least one year in a supervisory role.
  • Preferred knowledge of food and beverage service operations.
  • Compliance with applicable certification requirements, including Food Handlers, Alcohol Awareness, CPR, and First Aid.
  • Familiarity with all relevant hospitality policies and terminology.
  • Possession or ability to obtain Food Manager Certification (as required by state).

Essential Responsibilities:

  • Engage with guests and staff in a welcoming, service-oriented manner.
  • Monitor and analyze costs, breakage, and quality support for various outlets and events, assisting the Executive Chef in maintaining culinary supplies.
  • Ensure the condition and cleanliness of kitchen equipment and areas.
  • Oversee cooking procedures, safety measures, inventory management, and budget adherence.
  • Recommend cleaning projects to the Outlets Manager.
  • Contribute to the preparation of the annual stewarding operating budget aligned with the Food & Beverage Department's objectives.
  • Educate staff on current safety regulations to ensure compliance with health and safety standards.
  • Report hazardous situations, emergencies, or security threats to management.
  • Determine stock levels and manage par stocks for all materials and equipment.
  • Lead, supervise, and evaluate the Stewarding department staff.
  • Ensure all kitchen staff perform their job functions effectively.
  • Maintain the highest sanitation and cleanliness standards for all facilities and equipment.
  • Manage the purchasing and storage of food, equipment, and supplies as necessary.
  • Collaborate with the engineering department to schedule preventative maintenance as needed.
  • Control costs by minimizing breakage, loss, and excessive chemical usage.
  • Ensure proper handling of all chemicals.
  • Participate in meetings as required.
  • Assist with additional duties as needed, which may include food preparation support and completing set-up sheets.
  • Maintain open communication with other departments.
  • Participate in the property manager on duty program as assigned.
