POSITION TITLE: Sushi Specialist

ROLE SUMMARY:

As a Sushi Specialist, you will be responsible for crafting and presenting high-quality sushi dishes in a fast-paced environment. Your expertise will ensure that all food orders are prepared swiftly and in accordance with established culinary standards.

KEY RESPONSIBILITIES:
  • Uphold the business objectives, ethics, and values of Harrah's Cherokee Casino Resort.
  • Deliver prompt and efficient service of all menu items to the dining staff.
  • Prepare a variety of food products while ensuring quality and visual appeal.
  • Execute all necessary functions in the preparation and cooking areas.
  • Provide exceptional service to guests and team members.
  • Prepare, cook, and season all food items with precision.
  • Maintain consistency and uniformity in all orders dispatched.
  • Comply with kitchen maintenance and sanitation protocols.
  • Control food production processes, including cooking methods and food safety standards.
  • Organize workflow to manage peak service periods effectively.
  • Prepare and serve sushi in line with health and safety regulations.
  • Ensure cleanliness and organization of workstations throughout the kitchen.
  • Manage inventory levels and coordinate orders as needed.
  • Safeguard company assets against waste and theft.
  • Fulfill special requests from customers as required.
  • Minimize errors in food preparation.
  • Possess knowledge of Harrah's facilities, promotions, and services.
  • Complete tasks efficiently, even if it requires extended hours.

  • Properly store and maintain kitchen equipment and utensils.

  • Monitor production volumes regularly.

  • Complete daily checklists as verified by supervisory staff.

MINIMUM QUALIFICATIONS:
  • High school diploma or GED preferred.
  • Minimum one year of sushi preparation experience required.
  • At least two years of culinary experience required.
  • Serv Safe certification and knowledge of food safety standards required.
  • Essential Knowledge and Skills:
  • Understanding of kitchen sanitation practices.
  • Comprehensive knowledge of food preparation and presentation techniques.
  • Expertise in sushi preparation and service.
  • Proficient in fresh fish cutting and preparation.
  • Skillful in using knives and food preparation equipment.
  • Excellent interpersonal communication skills.
  • Able to operate various kitchen equipment effectively.
  • Strong problem-solving abilities and mathematical skills.
  • Professional appearance and hygiene standards.
PHYSICAL AND ENVIRONMENTAL REQUIREMENTS:
  • Ability to manage multiple tasks simultaneously.
