Expectations:

Efficiently cuts meat according to specified product standards and timeframes.

Adheres to the buffet production system to ensure quality and compliance with shelf life standards.

Regularly rotates cut and packaged meat to maintain freshness.

Stocks and organizes the Meat Cooler in alignment with approved food safety protocols.

To prevent cross-contamination, thoroughly sanitizes all surfaces between the preparation of different types of meat.

Identifies spoiled meat by its texture and odor.

Maintains cleanliness in the meat room according to service and quality standards.

Complies with local health department regulations.

Utilizes administrative forms to track inventory of all meat products and assess production levels.

Informs management of any discrepancies in product or equipment.

Conducts opening and closing administrative tasks.

Properly maintains equipment following the Equipment Maintenance manual.

Completes assigned duties as per the roster.
