Position: Executive Chef

Salary: $100,000+ DOE

Location: Park City, UT

Join a dynamic and expanding restaurant group, guided by a James Beard Award Winning Chef, in a premier ski destination. This Executive Chef role will lead the pre-opening development and management of three innovative dining concepts: a bustling brasserie and bar, an upscale chef's tasting menu experience, and a charming French pastry and coffee shop. There are significant opportunities for advancement with future projects including a boutique hotel, luxury residential spaces, and a new golf course designed by a renowned golfer.

Position Overview:

The Executive Chef is responsible for overseeing and coordinating all culinary operations across the various restaurants and outlets. Reporting to the Head Operating Team, this role collaborates closely with the Food & Beverage Director to ensure that all service and quality standards are met.

Pre-Opening Responsibilities:

  • Contribute to the design process, particularly in kitchen and storage layout.
  • Research and budget for kitchen equipment and supplies.
  • Establish and maintain vendor relationships.
  • Collaborate with the Executive Team to adjust opening budgets and forecasts.
  • Assist in conceptualizing and developing menu identities and perspectives.
  • Lead the creation of menus for all service periods including breakfast, lunch, dinner, and special events.
  • Plan labor needs for the back of house operations.
  • Set operational standards for kitchen staff, including:
    • Recipe guidelines
    • Inventory management
    • Kitchen workflow and station guidelines
    • Presentation standards
    • Training programs
    • Health and safety protocols
    • Menu descriptions
  • Work with the F&B Director to develop employee manuals.
  • Oversee recipe testing and cost analysis.
  • Coordinate with health and safety departments for necessary permits.
  • Participate in the recruitment of managerial and kitchen personnel.
  • Assist in establishing a private event division.
  • Plan and manage pre-opening and soft launch events.
  • Engage in marketing and special events.
  • Train, schedule, and lead front of house staff to ensure a successful launch.

Opening Responsibilities:

  • Ensure quality control in food preparation, taste, and presentation.
  • Maintain labor and cost of goods sold (COGS) within budgetary limits.
  • Conduct regular evaluations of food, beverage, and service quality.
  • Explore and establish new vendor partnerships.
  • Ensure compliance with all food handling, sanitation, and safety regulations.

Qualifications:

  • Extensive fine dining and management experience in major urban centers and ski resorts.
  • Minimum of 5 years in a senior management role.
  • A degree in Culinary Arts is preferred.

Required Skills:

  • Advanced knowledge of food and beverage trends.
  • Understanding of business and management principles related to strategic planning.
  • Proven leadership abilities.
  • Proficiency in MS Office, Google applications, and popular POS systems.
  • Expertise in budgeting.
  • Experience in customer and employee service principles.
  • Strong verbal and written communication skills.

Physical Requirements:

  • Most tasks are performed indoors with some outdoor responsibilities.
  • Position requires active engagement and direction throughout the workday.
  • Must be able to stand for extended periods and lift up to 50 lbs.
