Location: Mentor, OH
Work Schedule: Full Time | Sunday to Thursday, 2:00 PM – 11:00 PM

Role Summary: The Seafood Filleting Specialist is responsible for utilizing hand tools to conduct routine cutting and trimming of fish and seafood products.
Key Responsibilities:
- Possess a solid understanding of seafood processing equipment.
- Prepare fish by cleaning, candle checking, parasite removal, trimming, skinning, and deboning.
- Accurately weigh fish and label containers with weight, contents, and customer information.
- Utilize company tracking systems for processing, cutting, and yield assessment.
- Interpret program tickets/tags, select appropriate species for orders, and ensure proper labeling and scanning.
- Open cases and prepare raw materials for subsequent processing.
- Ensure adherence to product specifications in accordance with established guidelines.
- Comply with all company policies, procedures, and safety protocols.
- Work efficiently to meet all imposed deadlines.
- Adapt to sudden changes in customer demands and operational objectives.
- Demonstrate commitment to completing tasks thoroughly.
- Provide excellent customer service by understanding and executing customer specifications.
- Prepare fish products to meet customer requirements and company yield standards.
- Handle special orders of fish products as requested by customers.
- Maintain cleanliness in the cutting area, ensuring a safe and organized workspace.
- Follow FDA regulations for the processing and production of fresh and frozen seafood.
- Collaborate effectively with team members to foster a proactive work environment.
- Complete additional tasks as assigned by the supervisor.
Qualifications:
- High school diploma is mandatory.
- Experience in food processing, safety, and storage operations is preferred.
- Strong problem-solving abilities.
- Self-motivated with the ability to work independently and exercise sound judgment.
- Proficient knife handling skills with the ability to use appropriate tools.
Working Environment:
- Availability for extended hours and weekend shifts, particularly during peak seasons.
- Ability to work in temperatures consistently ranging from 42 to 55 degrees.
- Regularly required to stand, walk, and use hands for handling objects or controls.
Physical Demands:
- Willingness to work third shifts, weekends, or variations thereof.
- Capability to frequently lift and carry products weighing between 50 lbs. to 90 lbs.
- Ability to remain on feet for extended periods.
- Frequent work in cold and refrigerated environments for prolonged durations.
