Job Summary

We are seeking a skilled Dietary Cook to join our team at Frontier Management (OR). As a Dietary Cook, you will be responsible for preparing and serving meals to our residents, ensuring that they receive high-quality food service that meets their nutritional needs.

Key Responsibilities

  • Prepare meal items according to planned menus and standardized recipes, referring to the supervisor or dietitian as needed.
  • Review menus, resident census information, production guides, and pre-prep sheets to determine the type and quantities of food to be prepared.
  • Prepare food according to safe food handling guidelines, per company policy and procedure, and state and federal codes and regulations.
  • Assist with food ordering, storage, and preparation as designated by the supervisor.
  • Maintain standards for food preparation and quality of food service, using nutritionally equivalent substitutes when required.
  • Operate a variety of kitchen utensils and equipment, such as blenders, mixers, food slicers, steamers, food processors, convention ovens, ranges, and tilt skillets.
  • Prepare consistency modified and diet foods appropriately, and prepare and assist with special function meals.
  • Complete pre-preparation tasks, including washing, peeling, and cutting vegetables and fruits, slicing meat, and measuring or weighing ingredients for menu compliance and nutrition accuracy.
  • Prepare and serve food attractively, using gravies, sauces, and garnishes as needed, and test and observe food for palatability.
  • Monitor and record food temperatures prior to meal service.
  • Make and record menu changes under the direction of the supervisor, using nutrition equivalent substitutes when required.
  • Use proper hand washing techniques, thaw foods appropriately, store food using correct packaging and labeling, and use gloves appropriately and change when required.
  • Follow the cleaning schedule, clean equipment and work areas after each use, sweep and mop kitchen floors when assigned, take trash to the dumpster if assigned, and wash pots and pans when assigned.
  • Assume responsibility for meeting meal schedules.
  • In the absence of the Dietary Manager, the Dietary Aide is accountable to the Cook.

Requirements

  • High school diploma or equivalency preferred.
  • Two years as a cook in a large-scale cooking operation, preferred.
  • One year's work experience in long-term care, preferred.
