About the Role:

We are seeking a skilled and experienced Master Sushi Artisan to join our team at The Greenbrier Hotel. As a key member of our culinary staff, you will be responsible for preparing and serving high-quality sushi dishes in an open kitchen environment.

Responsibilities:

• Prepare and cook all types of sushi, sashimi, and Asian cold and hot dishes to meet the highest standards of quality and presentation.
• Develop and maintain menus, recipes, and cooking techniques to stay up-to-date with the latest trends and customer preferences.
• Maintain a clean and organized workspace, adhering to health and safety regulations and protocols.
• Supervise and train junior staff members to ensure they have the necessary skills and knowledge to perform their duties effectively.
• Collaborate with other chefs and kitchen staff to ensure seamless communication and execution of menu items.
• Manage inventory, ordering, and supply chain logistics to minimize waste and optimize efficiency.

Requirements:

• 5+ years of experience in food production, preferably in a high-end hotel or restaurant setting.
• Extensive knowledge of sushi preparation, presentation, and service standards.
• Ability to work well under pressure, meeting tight deadlines and maintaining high standards of quality and cleanliness.
• Strong leadership and training skills, with the ability to motivate and develop junior staff members.
• Excellent communication and teamwork skills, with the ability to work effectively with colleagues from diverse backgrounds and cultures.
• Computer literacy and basic understanding of Excel and Word programs.
• West Virginia Food Handler's Permit required.
