Position Title: Food Preparation Specialist / Cook Assistant
Reports To: Culinary Director
Role Summary:
The Food Preparation Specialist / Cook Assistant plays a crucial role in the assembly and cooking of ingredients and meals for the various dining establishments under Ava's Hospitality Group. This position requires precise execution of recipes, adherence to food safety protocols, and maintaining a tidy and organized kitchen space. The Food Preparation Specialist / Cook Assistant collaborates with fellow kitchen personnel and reports directly to the Culinary Director, offering a significant opportunity for professional development and skill enhancement. This role is not customer-facing and primarily involves daytime shifts, avoiding the common evening hours associated with restaurant work.
Key Responsibilities:
- Batch Cooking and Ingredient Preparation:
- Utilize standardized recipes to prepare substantial quantities of ingredients and meals.
- Accurately measure, mix, chop, and cook components according to culinary standards.
- Operate various kitchen appliances, including ovens, grills, slicers, and mixers.
- Food Safety and Quality Control:
- Ensure all food is prepared and stored in compliance with food safety regulations.
- Monitor food quality and communicate any concerns to the Culinary Director.
- Label and date all prepared items correctly for effective inventory management.
- Kitchen Cleanliness and Organization:
- Maintain a clean and orderly workspace at all times.
- Regularly wash and sanitize kitchen tools, equipment, and surfaces.
- Dispose of waste and recycling in accordance with kitchen protocols.
- Inventory Oversight:
- Assist in receiving and storing food supplies and ingredients.
- Conduct routine inventory assessments and report any shortages or discrepancies.
- Ensure proper stock rotation to minimize waste (FIFO method).
- Team Collaboration and Communication:
- Work closely with other kitchen staff to ensure efficient and timely ingredient preparation.
- Communicate effectively with the Culinary Director and team members regarding any issues or needs.
- Participate in kitchen meetings and training sessions as required.
- Compliance with Policies and Procedures:
- Adhere to all company policies, procedures, and guidelines.
- Follow health and safety standards in the kitchen.
- Assist with additional duties as assigned by the Culinary Director.
Qualifications:
Education: High school diploma or equivalent. Culinary training or certification is advantageous.
Experience: Previous experience in a commercial kitchen, commissary kitchen, or similar environment is preferred.
Skills:
- Strong knowledge of food safety and sanitation practices.
- Ability to read and follow standardized recipes and instructions.
- Proficiency with kitchen equipment and tools.
- Excellent organizational skills and attention to detail.
- Capability to work in a fast-paced environment and manage multiple tasks simultaneously.
Physical Requirements:
- Ability to stand for extended periods.
- Ability to lift and carry heavy items (up to 50 pounds).
- Ability to work in hot and humid environments.
Work Environment:
