Job Description

POSITION OVERVIEW

As a Culinary Specialist, you will be responsible for crafting exquisite plate and platter presentations for both ala carte and banquet services, as well as club events. Your role will involve setting up and managing action stations for various dining experiences, including buffets and special events. You will also be tasked with carving meats for guests upon request and ensuring that all food items are adequately stocked for service. Proficiency in operating kitchen equipment such as ovens, stoves, grills, microwaves, and fryers is essential for preparing a diverse range of dishes. You will prepare ingredients by portioning, chopping, and storing food, while adhering to recipes and quality standards.

DUTIES AND RESPONSIBILITIES

  • Regulate cooking temperatures for various equipment and ensure proper thawing of frozen items. Maintain food logs and monitor the quality and quantity of prepared food. Communicate effectively with team members during peak service times and inform management of excess food items available for daily specials.
  • Uphold a professional appearance and maintain confidentiality regarding proprietary information. Anticipate and address the needs of members, fostering positive relationships with colleagues to achieve common goals. Physical stamina is required, including the ability to stand, sit, or walk for extended periods, as well as lift and carry objects weighing up to 25 pounds.
  • Execute additional reasonable duties as assigned by the Sous Chef or Executive Chef. Determine food presentation methods using Banquet Event Orders (BEO) and create visually appealing food displays. Assist with banquet plate-ups and ensure proper portioning and garnishing of dishes.
  • Adhere to all company policies regarding safety and security. Report any maintenance needs or unsafe conditions to management and complete necessary safety training.
  • Collaborate with team members to meet quality expectations and standards. Maintain a clean and professional appearance at all times.
  • Fulfill other reasonable job responsibilities as requested by supervisors.

Requirements:

  • A high school diploma or GED; a minimum of 2 years of experience in a similar role or an equivalent combination of education and experience.
  • Comprehensive knowledge of cooking techniques, baking, and both banquet and ala carte service.
  • Strong interpersonal skills and the ability to work effectively within a team.
  • Familiarity with culinary trends and international cuisines.
  • Professional demeanor and appearance.
  • Excellent verbal and written communication skills.
  • Flexibility to adapt to the dynamic demands of club operations.
