Key Responsibilities:

  • Cut meat according to product specifications and time standards to optimize profit and ensure guest satisfaction.
  • Implement and follow the buffet production system to maintain quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure freshness and prevent spoilage.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.

Cleanliness and Sanitation:

  • Sanitize all surfaces between production of chicken and other meats to prevent cross-contamination.
  • Recognize and remove spoiled or contaminated meat to maintain a safe and healthy environment.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Comply with local health department laws and regulations.

Operational Excellence:

  • Use administration forms to maintain an inventory of all meat products and determine production levels.
  • Notify management of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Maintain equipment according to the Equipment Maintenance manual.
  • Perform duty roster tasks as assigned.

Requirements:

  • Ability to work in a fast-paced environment and meet production standards.
  • Strong attention to detail and ability to maintain a clean and organized workspace.
  • Excellent communication and teamwork skills.
  • Ability to lift and move heavy objects (up to 50 pounds).
