Job SummaryThe R&D Manager - Artisan Bread and Lamination is a key member of our product development team, responsible for developing new food offerings and setting process and quality standards for our product portfolio. This role requires a strong passion for food and innovation, as well as excellent communication and leadership skills.
Key Responsibilities- Develop and maintain process standards for artisan bread and lamination, including dough temperature, hydration, dough handling, and fermentation.
- Maintain manufacturing and process specification records for all SKUs and implement changes based on artisan bread principles.
- Review SAP standards for weight and weight loss vs. actual processing parameters and ensure compliance.
- Work with the FSQA team to evaluate Finished Good Oven-Visual Aid Guides and determine corrective action for off-target product.
- Develop location training manuals for bakery operators.
- Consult and ensure process compliance with projects, including product development, process improvements, special projects, and technical innovation improvements.
- Identify and resolve problems in a timely manner, gather and analyze information skillfully, and develop alternative solutions.
- Pursue training and development opportunities to continuously build knowledge and skills.
- Assist team members in creating samples from formulas handed down.
- Responsible for sample inventory control and proper storage.
- Responsible for ingredient/packaging inventory and storage.
- Responsible for sample shipments and maintenance of shipping and receiving records for the lab.
- Support team members on line trials when necessary.
- Adhere to NPD/BRC guidelines and Good Manufacturing Practices.
- Maintain a high level of knowledge base regarding market trends and new ingredient opportunities through attending industry seminars, continuing education, trade shows, industry periodicals, and professional technical/culinary associations.
- Conduct Product Ideation sessions in support of new platform growth, both blue-sky innovation and at customer request.
- Demonstrate expertise in R&D equipment use and settings.
- Knowledge of Aspire Bakeries product offerings.
- High school diploma or GED equivalent required; AA, BA, or BS preferred. Additional culinary education preferred.
- 3 to 5 years working as an industrial food developer required. Additional culinary development experience preferred.
- Expert grasp of English (verbal and written) required. Fluency in Spanish preferred.
- Domestic travel up to 25% of time. Occasional international travel if needed.
