Position Objective:
The Fire Camp Culinary Supervisor is responsible for overseeing kitchen operations at fire camps, adhering to the guidelines set forth by our Mobile Food Service Managers. The ideal candidate will utilize their culinary expertise and leadership abilities to ensure high levels of customer satisfaction. This role requires a proactive leader who can effectively manage kitchen staff and operations under various weather conditions while serving large groups efficiently.
Key Responsibilities:
- Act as the Kitchen Operations Manager and Lead Cook at the fire camp.
- Ensure proper setup and breakdown of all kitchen facilities, including salad bars and beverage stations.
- Lead the kitchen team to ensure compliance with government contract requirements.
- Stay informed about current government contract specifications relevant to each assignment.
- Monitor and enforce health and sanitation standards among all kitchen personnel.
- Supervise kitchen staff, collaborating with the Mobile Food Service Unit Manager to coordinate schedules and duties.
- Maintain cleanliness and organization within the kitchen environment.
- Keep accurate temperature logs for all kitchen equipment.
- Work closely with the Mobile Food Service Unit Manager and Inventory Manager on food procurement.
- Collaborate with the Executive Chef to develop menus prior to the fire season.
- Communicate any necessary menu adjustments to the Mobile Food Service Unit Manager in a timely manner.
- Assist in resolving kitchen staff issues, including discipline and hiring processes.
- Ensure that all Mobile Food Service Unit equipment is cleaned and ready for deployment before the fire season.
- Report any malfunctioning kitchen equipment to the Executive Chef or Mobile Food Service Unit Manager.
- Maintain quality control of all food products at all times.
- Coordinate food inventory management with the Inventory Manager and suppliers.
- Train new kitchen staff on operational procedures.
- Participate in cooking duties to fulfill meal orders as needed.
Required Skills and Qualifications:
- Demonstrated experience in food service management and leadership.
- Strong attention to detail and accuracy.
- Ability to work collaboratively within a team environment.
- Maintain a professional demeanor with colleagues and clients.
- Highly organized with the capacity to adhere to established routines.
- Trustworthy and reliable.
- Previous experience with government contracts is advantageous.
- Adaptability to work in remote locations with minimal notice.
- Strong problem-solving skills.
Certifications Required:
- ServeSafe: Food Manager Certification.
