About the RoleWe are seeking a highly skilled and detail-oriented Dishroom Steward to join our culinary team at Sage Restaurant Group. As a key member of our kitchen staff, you will be responsible for maintaining a clean and sanitary dishroom environment, ensuring that all dishes, utensils, and equipment are properly cleaned and stored.
Responsibilities- Dishroom Operations: Gather all dirty dishware from tubs, rinse, and stack in dishracks, clearing dishes of leftovers and trash to prepare for automated washing.
- Dishwashing: Load full dishracks on the belt, ensuring correct placement according to the instructions for the operation of the machine. Operate the automatic dishwashing machine using controls as instructed.
- Sanitation and Cleaning: Load dishwashing solutions into automatic dispensers, regulating the output of detergents and chemicals to the dishwashing machine by monitoring and adjusting controls. Unload clean dishes from racks after processing, inspect for cleanliness, and stack in specified carts and shelves for easy use by restaurant and kitchen staff.
- Manual Cleaning: Manually scrub pots, pans, and other kitchen equipment that cannot be washed automatically, using detergents, scourers, and special solutions as required. Inspect for cleanliness, manually dry with hand towels, and put away in correct places.
- Equipment Maintenance: Maintain the automatic dishwashing equipment in good condition and working order, following manufacturers' instructions to prolong the life of the equipment, prevent breakdowns, and meet mandated health compliance regulations.
- Housekeeping: Keep the dishroom in clean and orderly condition at all times, sweeping, mopping, emptying trash, wiping counters and equipment, and organizing shelves to maintain a sanitary work station and meet mandated health compliance requirements.
- Additional Duties: Mop kitchen floors as requested and at the end of each shift, clean all kitchen work surfaces as regularly scheduled by manager, including walls, ceilings, hoods, vents, and ovens. Gather all trash cans from kitchen work areas at the end of each shift and empty into the outside trash compactor. Sweep the loading dock and kitchen entrance areas, clearing litter and debris to trash bins, for the safety of employees and purveyors.

- Knowledge/Skills: Basic knowledge of dishwashing
- Physical Demands: Must be able to see minute objects at arms length, read meters and controls, bend, squat, crouch, crawl, reach, and retrieve items from above head. Must be able to lift, push, pull, and carry up to 50 lbs, including serving trays, carts, tables, chairs, and small equipment up to 75% of the time. Must be able to travel up to 300 feet and stand on a regular basis throughout the shift. Must be able to understand and follow verbal/written instructions and communicate effectively.
