Job Summary

Maintains a clean and sanitary environment in the dishroom, ensuring the highest standards of food safety and quality.

Key Responsibilities
  • Scrape and rinse food from dirty dishes, pots, pans, and trays, and wash them by hand or place them in racks or on a conveyor to the dishwashing machine.
  • Wash pots, pans, and trays according to established procedures, ensuring complete cleanliness and sanitation.
  • Polish silverware using a burnishing machine, chemical dip, buffing wheel, and hand cloth, depending on assigned equipment and procedures.
  • Ensure compliance with outlined safety procedures and maintain temperatures and chemical levels as outlined by provided standards.
  • Keep the dish area orderly and in compliance with safety standards, sweeping and mopping kitchen floors as needed.
  • Wash worktables, walls, refrigerators, meat blocks, and other food preparation surfaces.
  • Remove trash and place it in designated containers, and steam clean or hose out garbage cans.
  • Transfer supplies and equipment between storage and work areas, and help load and unload supplies and product.
