About the Role
The Sous Chef position is a key leadership role within the culinary team, responsible for driving the delivery of exceptional food and guest experiences at our locations. We are seeking an experienced culinarian with a passion for great food and guest service to join our team.
Key Responsibilities- Proactively coach and motivate team members to deliver their best
- Identify opportunities and drive improvement in location operations
- Monitor quality and sanitation standards
- Deliver against financial goals and budgets
- Set the standard for culinary excellence
- Oversee equipment maintenance routines
- Communicate and monitor par levels
- Support the creation of menu build diagrams and monitor output to ensure standards are adhered to
- Ensure all routine kitchen management procedures are adhered to, including opening and closing checklists, cleaning schedules, temperature checks, waste sheets, and pest control
- Creation of menu specifications, as needed
- Set standards for chef table setups
- Creation of prep sheets and line layout diagrams to ensure consistent and efficient food production
- Perform daily line checks to verify quality and flavor standards
- Lead game day culinary operations
- Manage end-of-month inventory, in partnership with the purchasing team, to ensure accurate recording of stock
- Proactively monitor and manage food waste to drive cost of food
- Deliver training and coaching to team members on both the menu and general culinary skills
- Manage employee breaks to ensure the well-being of all team members
- Deliver pre-shift meetings to set the tone for events
- Conduct corrective action with team members to address any issues related to performance
- Complete onboarding and orientation for new members of the Culinary team
- Ensure all elements of food ordering, delivery, prep, transportation, and service are conducted to a high standard in line with our sanitation and safety Core Signatures
- Support other Levy locations, as needed
- Support the maintenance and update of recipes
- Manage culinary department budget
- Other duties, as assigned
- 2+ years of experience in a culinary leadership position
- A culinary degree is preferred
- High level of computer literacy
- Understanding of financial concepts
- Passion for hospitality, food, and retail
- Excellent interpersonal and stakeholder management skills
