As the nutrition authority for Rice University Dining, the Nutrition Specialist supports the department's mission by designing educational and nutritional programs, managing associated services, and driving improvements to assist the community with specific dietary and food allergy requirements. By merging expertise in nutrition, food science, and culinary arts, the Nutrition Specialist develops and implements programs to advocate health and wellness, provides nutrition information for on-campus dining, offers counseling to individuals and groups, and creates materials for nutrition initiatives.
Ideal Candidate Profile:
The ideal candidate possesses experience in a collaborative environment and is adept at managing multiple tasks in a dynamic setting. A solid understanding of various software applications, along with experience in inventory management and recipe formulation, is essential.
Workplace Requirements:
This position is strictly on-site, requiring all responsibilities to be performed in person. Adherence to physical demands is necessary, including the ability to lift and carry up to 50 pounds regularly, as well as standing or walking for extended periods. Other physical requirements include bending, crouching, kneeling, reaching, climbing, and balancing. The role may involve exposure to temperature extremes in commercial kitchen environments. Flexibility in scheduling is required, including evenings, weekends, and holidays. This position is deemed essential during campus emergencies, necessitating the incumbent to report to campus and provide designated essential services.
Compensation: $72,600+
Minimum Qualifications:
- Bachelor's degree from an accredited institution in dietetics, nutrition, food service systems management, clinical nutrition, public health nutrition, food science, or closely related fields.
- Current Registered Dietitian credential from the Commission on Dietetic Registration or the Academy of Nutrition and Dietetics.
- Maintenance of dietetic registration and continuing education hours as mandated by the Academy of Nutrition and Dietetics and applicable state licensure regulations.
- A minimum of 3 years of professional experience in nutrition or a related field; candidates with relevant food service experience will also be considered.
Technical Skills:
- Proficient in menu management software, office applications, and email platforms.
- Knowledgeable in food safety regulations and best practices.
- Skilled in nutrition assessment, counseling, and educational methodologies.
- Familiar with menu planning, food service operations, and sustainability practices.
- Exceptional organizational skills with a keen attention to detail.

- Willingness to obtain and maintain City of Houston food handlers and food manager certification.

Conduct individual and group nutrition counseling sessions for the campus community. Provide evidence-based nutrition information to promote wellness and address specific health concerns.
Menu Planning and Evaluation:
Collaborate with dining services to create nutritious and diverse menu options that cater to the dietary preferences of the campus community. Assess menus for nutritional adequacy and make recommendations for enhancements. Incorporate sustainability principles into menu planning to promote environmentally responsible food choices.
Food Safety and Sanitation:
Oversee food safety protocols in campus dining facilities, ensuring compliance with relevant regulations. Develop and implement food safety training for dining services staff, focusing on proper food handling and sanitation practices. Conduct regular inspections of food service areas to identify and rectify potential hazards.
Campus Wellness Initiatives:
Work with campus wellness committees to create programs that encourage healthy eating and active lifestyles. Participate in health fairs and outreach activities to promote nutrition-related topics and available services. Collaborate with student organizations to integrate nutrition education into campus events.
Research and Assessment:
Stay informed on current research and trends in nutrition and public health. Collect and analyze data on campus dining habits and nutrition knowledge to guide program development. Contribute to scholarly publications and presentations related to nutrition initiatives.
Collaboration with Campus Services:
Partner with student accessibility services and campus health services to facilitate meal plan accommodations for students with dietary restrictions.
Dining Tours:
Conduct personalized tours for students and families, highlighting dining options that meet specific dietary needs.
Compliance with Guidelines:
Ensure adherence to HIPAA and FERPA regulations throughout the nutrition counseling process.
