Key Responsibilities include, but are not limited to:
- Assessing and verifying the freshness of daily fish inventory and ensuring availability of all necessary sushi-making ingredients.
- Creating visually appealing food presentations, emphasizing artistic balance and vibrant colors.
- Engaging with diners to educate them about sushi, providing insights for both seasoned and novice sushi enthusiasts.
- Maintaining a tidy and organized workstation, including regular cleaning of cutting boards and proper storage of perishable items.
- Sharpening and cleaning sushi knives to uphold quality standards.
- Adhering to food standards established by the Food & Beverage Director and Brewery Executive Chef.
- Collaborating with the Brewery Executive Chef to develop innovative sushi recipes while following established recipes and control procedures.
- Managing inventory control systems, purchasing, and record-keeping.
- Promptly communicating any issues or concerns to the Brewery Executive Chef.
- Participating in the Food Safety Program and training initiatives.

Qualifications

Education/Experience/Knowledge
Education Level: High School Diploma or equivalent required.
Experience: Minimum of 1 year as a sushi chef.
Knowledge: Familiarity with sushi-grade fish is essential.
Language Skills
Ability to read and interpret safety rules, operating manuals, and procedural documents. Effective communication skills with guests and team members are required.
Mathematical Skills
Proficiency in basic arithmetic operations, including addition, subtraction, multiplication, and division, using whole numbers, fractions, and decimals. Ability to compute rates, ratios, and percentages.
Reasoning Ability
Ability to apply common sense to follow instructions in written, oral, or diagram form; ability to identify problems, gather data, establish facts, and draw valid conclusions.
Certificates, Licenses, Registrations
Class B Gaming License (available for a nominal fee with a clean background check).
Physical Demands

- Ability to stand for up to 8 hours.
- Ability to walk, maintain balance, and navigate through a working kitchen and dining area.
