Responsible for the overall success of daily culinary operations. Demonstrates culinary expertise by actively engaging in tasks while overseeing staff and managing all food-related activities. CANDIDATE PROFILE
Education and Experience
• High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional field.
OR
• 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline; 2 years of experience in culinary, food and beverage, or a related professional field.
CORE WORK ACTIVITIES
Upholding Culinary Standards and Responsibilities
• Manages kitchen shift operations and ensures adherence to all Food & Beverage policies, standards, and procedures.
• Estimates daily production requirements weekly and communicates these needs to kitchen staff on a daily basis.
• Assists the Executive Chef with all kitchen operations and food preparation.
• Prepares and cooks a variety of foods, either regularly or for special events.
• Develops and creates new applications, ideas, systems, or products, including artistic contributions.
• Assists in determining food presentation and creates appealing food displays.
• Maintains standards for purchasing, receiving, and food storage.
• Ensures compliance with food handling and sanitation regulations.
• Performs all duties of kitchen managers and staff as required.
• Recognizes superior quality in products, presentations, and flavors.
• Ensures compliance with all relevant laws and regulations.
• Follows proper handling and temperature protocols for all food items.
• Operates and maintains all kitchen equipment and reports any malfunctions.
• Checks the quality of raw and cooked food products to ensure standards are met.

• Supervises and coordinates the activities of cooks and kitchen staff engaged in food preparation.
• Leads shifts while personally preparing food items and fulfilling requests based on specifications.

• Brings issues to the attention of the department manager and Human Resources when necessary.
Additional Responsibilities
• Provides information to supervisors, colleagues, and subordinates through various communication methods.
• Analyzes information and evaluates results to determine the best solutions and resolve issues.
• Attends and participates in all relevant meetings.
The salary range for this position is $62,000 to $82,000 annually. Marriott offers a bonus program, comprehensive health care benefits, a 401(k) plan with up to 5% company match, an employee stock purchase plan at a 15% discount, accrued paid time off (including sick leave where applicable), life insurance, group disability insurance, travel discounts, adoption assistance, paid parental leave, health savings accounts (except for positions based out of or performed in Hawaii), flexible spending accounts, tuition assistance, pre-tax commuter benefits, and various life and work wellness benefits. Benefits and incentive compensation may be subject to general eligibility, waiting periods, contributions, and other requirements and conditions.
