We are seeking a highly motivated Steamed Dumpling Artisan to join our team at Din Tai Fung. As a key member of our kitchen staff, you will play a vital role in ensuring the highest quality steamed dumplings for our guests.

Din Tai Fung is a renowned Chinese restaurant specializing in Xiao Long Bao, or steamed soup dumplings, each made by hand with our Golden Ratio of 18 folds. Founded in Taiwan in 1958 and reborn as a dumpling and noodle restaurant in 1972, we have become world-renowned for our quality, standardization, and service.

About the Role

The Steamed Dumpling Artisan will be responsible for preparing, putting together, folding, and steaming dumplings for our guests. You will operate in a show kitchen, requiring you to maintain a tidy and professional appearance.

Training Expectations

Your journey at Din Tai Fung will begin as a Steamed Dumpling Trainee. Our hands-on training program is designed to equip you with the skills and knowledge needed to excel in this role. Upon completion of the program, graduates will transition into the Steamed Dumpling Artisan role, accompanied by a competitive hourly wage increase.

Job Responsibilities & Tasks

  • Prepares, Measures, and Cuts Dough
  • Rolls Dumpling/Bun Skins
  • Stuffs, Closes, and Arranges Dumplings/Buns in a Steamer
  • Adds Meat and Allergen Identifiers
  • Steams Dumplings/Buns
  • Maintains a Clean Working Space and Dumpling Room
  • Labels All Items in Accordance with Regulations and Procedures
  • Attends Monthly Staff and Dumpling Meetings

Supporting Functions

  • Keeps All Kitchen Areas Clean and Sanitized
  • Organizes Items within the Walk-in Coolers and Freezers
  • Lifts/Moves Boxes, Bags, Chairs, and Tables (up to 50 Pounds)
  • Assists with Regular Deep Cleaning of the Kitchen
  • Maintains Confidentiality regarding all Propriety Information, including but not limited to Recipes and Standard Operating Procedures (SOPs)

Job Requirements

  • Dumpling Experience Is Not Required
  • Experience in Prep, Specifically with Dough (Pastry, Pizza, etc.) Is a Plus

  • Ability to Stand for Long Periods of Time

Estimated Salary: $22.50 - $24.00 per hour, depending on experience and qualifications
