Meat Cutter

Job Summary:

We are seeking a skilled Meat Cutter to join our team at Lake Erie Corral, LLC dba Golden Corral. As a Meat Cutter, you will play a critical role in ensuring the quality and quantity of our meat products, which directly impacts the guest's dining experience.

Key Responsibilities:

• Food Production:
  • Cut meat according to product specifications and time standards.
  • Implement and follow the buffet production system to ensure quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure freshness.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.
• Cleanliness:
  • Sanitize all surfaces between production of chicken and any other meat to eliminate cross-contamination.
  • Recognize and remove spoiled meat by identifying signs of spoilage, such as stickiness, slickness, or unpleasant odors.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Comply with local health department regulations.
• Operational Excellence:
  • Use administration forms to maintain an inventory of all meat products and determine production levels.
  • Notify the Manager of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Maintain equipment according to the Equipment Maintenance manual.
  • Complete duty roster tasks.
