Baker I Job Description

We are seeking a skilled Baker I to join our team at Dollywood Parks & Resorts. As a key member of our culinary team, you will be responsible for producing high-quality bakery items, ensuring food safety and quality, and providing exceptional guest service.

Key Responsibilities:
  • Produce and decorate high-quality bakery items, including homemade breads, muffins, cookies, cakes, pies, and danishes.
  • Act as a quality assurance inspector, ensuring food meets our high standards.
  • Enforce bakery production schedules to ensure proper product availability.
  • Provide guests with professional showmanship through our observation window.
  • Enforce preparation and food handling standards to ensure proper portion control.
  • Ensure all products are presented in a visually appealing and appetizing manner.
  • Implement labeling, dating, and rotation standards, including the use of day dots and FIFO.
  • Guide hosts in learning proper food preparation, portion control, and storage of all bakery products.
  • Maintain proper sanitation, scrub, sweeping, dishwashing, mopping, and trash removal.
  • Hosts may be asked to work past their scheduled shift or be sent home early on slower days.
  • Be available and willing to work at different locations across Dollywood Properties.
  • Train and monitor Baker II and Baker III team members.
  • Follow all Authorized Operator Training Procedures.
  • Comply with state and local health department regulations and Culinary Services departmental policies.
  • Participate in safety issues related to personal safety and the safety of fellow hosts and guests.
  • Know, understand, and enforce the use of the "Start Fresh" program when necessary.
  • Be knowledgeable of proper cooking temperatures and hold times and responsible for taking and recording food temperatures hourly.
  • Complete credit card transactions in compliance with the Payment Card Industry Data Security Standards.
  • Learn and understand the Culinary Services Check 5.
  • Hosts are expected to be able to answer guest questions concerning Park layout and menu item availability.
  • Management reserves the right to change and/or add to these duties at any time.
Requirements:
  • Must be at least 18 years of age.
  • High school diploma or equivalent.
  • Culinary degree in Baking/Cake Decorating preferred.
  • Two years of bakery operation experience required.
  • Able to successfully complete ServSafe Manager Certification within 30 days of start date.
  • Must successfully complete a post-employment offer background check and drug screen.
Knowledge, Skills, and Abilities:
  • Able to display and live out Lead with Love qualities strongly rooted in the Dollywood Company culture.
  • Able to hear, see, and speak, read, and write in English.

  • Ability to tolerate detergents and chemicals such as, but not limited to, dish liquids, bleach, Tide, degreaser, oven cleaner, and other chemicals necessary to clean/sanitize equipment and environment.
  • Ability to work with others in a friendly, positive manner.
  • Able to maintain dependable work attendance and flexibility with assigned work schedules.
  • Must be able to lift 30 pounds with or without 2-person lift. 30+ pounds require a 2-person lift.
  • Must take Start Fresh training, as well as implement all safety aspects of Start Fresh training.
  • Must be able to work and tolerate temperatures ranging from 0 to 120 degrees.
  • Must comply with all Health Department, ServSafe, and Company regulations pertaining to safe food handling practices.
  • Ability to read/understand written instructions and company policies/procedures.
