We are seeking a highly skilled and passionate Sushi Artisan to join our team at IR Management LLC. As a Sushi Artisan, you will be responsible for preparing and presenting high-quality sushi dishes to our guests.
Key Responsibilities- Sushi Preparation: Accurately and efficiently prepare sushi dishes, adhering to our standard portion sizes, cooking methods, quality standards, and kitchen rules.
- Training and Guidance: Provide training and guidance to other team members on sushi culinary cooking procedures and plating techniques.
- Food Presentation: Prepare and present all food items, hot and cold, per sushi outlet standards and norms.
- Quality Control: Assume 100% responsibility for the quality of products served.
- Banquet Event Orders: Assist in the preparation of all banquet event orders.
- Cleanliness and Sanitation: Adhere to all DHEC regulations for cleanliness and sanitation.
- Inventory Management: Stock and maintain sufficient levels of food products at line stations to ensure a smooth service period.
- Portion Control: Portion food products prior to cooking according to standard portion sizes and recipe specifications.
- Work Station Maintenance: Maintain a clean and sanitary work station area, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment.
- Food Preparation: Prepare items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or maintaining.
- Plate Presentation: Follow proper plate presentation and garnish set up for all dishes.
- Product Handling: Handle, store, and rotate all products properly.
- Food Prep Assignments: Assist in food prep assignments during off-peak periods as needed.
- Closing Procedures: Close the kitchen properly and follow the closing checklist for kitchen stations. Assist others in closing the kitchen.
- Employee Meetings: Attend all scheduled employee meetings and bring suggestions for improvement.
- Additional Duties: Perform other related duties as assigned by the Kitchen Manager or manager-on-duty.
- Experience: A minimum of 2 years' experience in kitchen preparation and line cook experience.
- Cooking Skills: Basic understanding of professional cooking and knife handling skills.
- Food Cost Knowledge: Basic food cost knowledge.
- Kitchen Safety: Understanding and knowledge of kitchen safety, sanitation, and food handling procedures.
- Availability: Must be available to work nights, weekends, and holidays.
- Communication: Must be able to speak, read, and understand basic cooking directions.
- Teamwork: Must be able to communicate clearly with managers, kitchen, and restaurant employees.
- Guiding Principles: Ability to model and act in accordance with The Indigo Road guiding principles.
- Standing and Walking: Constant standing and walking.
- Environmental Exposures: Occasional environmental exposures to cold, heat, and water.
- Physical Demands: Occasional stooping, kneeling, or crawling. Occasional pushing, pulling, lifting, or carrying up to 50 lbs. Occasional ascending or descending ladders, stairs, ramps.
- Wrist and Spine Movement: Frequent, continual, intermittent flexing or rotation of the wrist(s) and spine.
- Reaching and Turning: Constant reaching, turning, and performing precision work around the kitchen area.
- Communication: Constant receiving detailed information through oral communication. Constant talking, expressing, or exchanging ideas by means of the spoken word.
