Position Summary:

As a Senior Culinary Manager, you will take charge of kitchen operations, ensuring a safe and hygienic environment for all staff members. Your role will involve preparing or overseeing meal preparations in alignment with corporate standards and guidelines. This position is ideal for a dynamic and entrepreneurial culinary expert.

Key Responsibilities:

  • Designs regular and customized menus adhering to established standards.
  • Utilizes standardized recipes and maintains portioning and presentation quality. Completes daily production logs and waste tracking sheets, ensuring meal quality through tasting.
  • Educates kitchen personnel on food preparation, safe handling practices, equipment operation, and sanitation in compliance with company and regulatory standards.
  • Establishes and upholds cleaning and maintenance schedules for kitchen equipment and workspaces, ensuring adherence by kitchen staff.
  • Manages inventory of food and non-food items to align with established guidelines while ensuring product availability.
  • Oversees the utilization of leftover food products in accordance with company policies.
  • Ensures compliance with health and sanitation regulations at all levels, evidenced by audits from local health departments and third-party evaluators.
  • Adheres to safety policies and procedures, including incident reporting.
  • Participates in departmental meetings and professional development programs as necessary.

Preferred Qualifications:

  • Associate's degree or equivalent experience.
  • Three to five years of progressive experience in culinary or kitchen management, depending on formal education or training.
  • Extensive experience in catering is advantageous.
  • Experience in high-volume, complex foodservice operations is highly desirable.
  • Background in institutional and batch cooking.
  • Hands-on culinary experience is essential.
  • Thorough understanding of food and catering trends with a focus on quality, production, sanitation, food cost management, and presentation.
  • Proficient in computer applications, including Microsoft Office Suite and email platforms.
  • ServSafe certification is highly preferred.
