Position Overview:
Assistant Kitchen Managers support the Executive Chef in overseeing the daily operations of restaurants and kitchens. They assist with menu development, inventory management, and supply oversight. They ensure that food quality is maintained and that the kitchen environment is well-kept. They uphold cleanliness and adhere to food safety standards.

Responsibilities:

  • Performs all duties of culinary and related kitchen staff to train new team members and assist during peak times.
  • Supervises daily shift operations and oversees the production and preparation of culinary items.
  • Opens and closes kitchen shifts, ensuring all assigned tasks are completed.
  • Maintains food handling and sanitation standards.
  • Collaborates with Restaurant and Banquet departments to coordinate service and timing of events and meals.
  • Assists in menu development and promotional activities.
  • Operates all departmental equipment as needed and reports any malfunctions.
  • Procures necessary supplies and manages food and supply inventories in accordance with budgetary guidelines.
  • Supervises staffing levels to ensure guest service, operational needs, and financial objectives are met.
  • Understands and implements safety standards.
  • Develops cleaning schedules for team members; ensures adherence to cleaning protocols and maintains sanitary work areas.
  • Ensures all associates have the necessary supplies, equipment, and uniforms.
  • Communicates areas requiring attention to staff and follows up to ensure compliance.
  • Assists in training associates on safety procedures and supervises their ability to execute departmental and hotel emergency protocols.

Qualifications:

  • General Education High School Diploma or Equivalent Required.
  • General Education Associate Degree Recommended.
  • Culinary Degree Preferred.
  • Understanding of Restaurant, Room Service, Bar/Lounge, and Banquet department procedures.
  • Knowledge of basic sanitation requirements and food handling safety standards.
  • Effective decision-making skills.
  • Strong customer and associate relations skills.
  • Knowledge of overall hotel operations as they relate to the kitchen.
  • Ability to effectively manage labor productivity.
  • Good presentation and platform skills.
