Position Overview: We are seeking a talented and experienced Sushi Chef to create exquisite sushi dishes while adhering to food safety and health regulations as well as the standards of our establishment. The ideal candidate will be responsible for preparing authentic Japanese sushi rice, skillfully cutting, slicing, and filleting a variety of fish, and managing supply orders as necessary. Additionally, you will be expected to tailor customer orders based on individual preferences and dietary restrictions.

Key Responsibilities:

1. Masterfully cut, slice, and fillet different types of fish.

2. Assess the quality of fruits, vegetables, and fish used in sushi preparation, notifying the Executive Chef of any subpar items.

3. Prepare a diverse range of sushi dishes following established standards for quality, portion size, presentation, and food safety.

4. Maintain a sanitized work environment to prevent food contamination.

5. Conduct regular inventory checks of food supplies and related products.

6. Report any kitchen equipment issues to the supervising manager.

7. Sterilize all utensils, instruments, and equipment used in sushi preparation prior to each use.

8. Collaborate with wait staff to ensure that special requests and food allergy considerations are addressed.
