Position Overview
The starting pay range for this role begins at $15/hour, reflecting the level of qualifications and relevant experience beyond the minimum requirements. This is a Full-Time position, requiring 35+ hours of work per week.
The Culinary Assistant is primarily responsible for the preparation of food items for use in menu offerings and specials that align with the standards of The Biltmore Company for all dining, banquet, and a la carte services. Culinary Assistants typically operate in the pantry and preparation areas of the kitchen, focusing on both cold and hot food preparations for service. They may also assist at buffet carving and service stations, preparing basic made-to-order requests for guests as needed. Additionally, they are responsible for the proper receiving, storage, and rotation of products. Success in this role will be evaluated based on guest satisfaction, cleanliness, organization, product quality, consistency, and timeliness of service. The Culinary Assistant will provide general support to the department, leadership, and the company as required.

Key Responsibilities:
- Prepare food and ingredients for menu items and specials.
- Maintain a sanitized work area and adhere to proper food safety standards.
- Ensure all kitchen equipment is cleaned, maintained, and in safe working order.
- Organize all stations, coolers, and storage areas for the next shift.
- Review daily forecasts to prepare and set up accordingly.
- Manage proper rotation, storage, and dating of all food items.
- Ensure all items are prepared, sliced, garnished, and presented to the company's quality standards.
- Handle all preparation work for line stations.
- Check food items daily for quality and freshness.
- Plan and prepare in advance to ensure readiness for the following shift.
Qualifications:
- Previous experience in food preparation within a full-service restaurant is strongly preferred. Culinary certifications and training are beneficial. The ideal candidate will have at least six months of experience in food preparation in a fine dining or upscale environment, with exposure to banquet and buffet production as well as a la carte service.
- Basic math, knife handling, and food preparation skills are essential.
- Knowledge of food sanitation procedures is required; ServSafe certification is preferred.
- Ability to read and execute recipes accurately.
- Capability to work effectively with or without direct supervision.
- Strong time management and organizational skills are necessary.
- Proactive approach, good judgment, and initiative are essential qualities.
- Commitment to delivering exceptional guest service and dining experiences is expected.
Physical Requirements:
- Ability to sit, stand, twist, bend, push, pull, walk, and lift up to 50 pounds regularly for periods of up to 12 hours a day.
- Ability to work effectively in a kitchen environment with varying temperatures and conditions (heat, cold, humidity) for extended periods.
