Job Summary

Maintain high standards in food production, including taste, presentation, cooking techniques, and allergen safety practices. Collaborate with Dining Services Managers and the K/A Supervisor to ensure quality, consistency, and presentation of all food. Develop and implement menu and recipe ideas, emphasizing creativity and innovation. Oversee all food production, ensuring proper methods of preparation and consistency are followed. Maintain food cost within budgetary guidelines and enforce proper sanitation standards. Aid in tracking food waste through the LeanPath system and contribute to developing strategies for waste reduction and creative reuse of surplus items. Collaborate with Dining Services Managers and Executive Chef in various operational tasks, meetings, and employee management. Monitor and actively support the development, coaching, addressing performance issues when necessary, disciplining, and evaluation of all kitchen staff to cultivate a positive and productive work environment. Implement training programs and opportunities to continually enhance culinary skills, providing ongoing support and encouragement to the team. Ensure accurate food storage and food labeling, including allergen information. Maintain sanitation policies and procedures using ServSafe standards; conduct monthly sanitation audits and collaborate with Production Manager in cleaning and maintaining all kitchen equipment. Oversee Dish Room operations. Other duties as assigned.

Requirements
  • Minimum five years of culinary management experience in high-volume settings.
  • Proficiency in global cuisines and knowledge of sustainability practices.
  • Strong leadership, problem-solving, and interpersonal skills.
  • Experience in supervising and coaching diverse teams and conducting performance evaluations.
  • ServSafe Certification required.
  • Experience using Microsoft Office or equivalent software.
  • Ability to lift at least 50 pounds.
