Meat Cutter

About the Role:

The Meat Cutter plays a crucial role in ensuring the highest quality and quantity of product for our guests. This position requires a high level of skill and attention to detail to optimize profit and provide an exceptional dining experience.

Key Responsibilities:

• Food Production:
  • Cut meat according to product specifications and time standards.
  • Complete use and following of the buffet production system to ensure quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure freshness.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.
• Cleanliness:
  • Sanitize all surfaces between production of chicken and any other meat to eliminate cross-contamination.
  • Recognize and remove spoiled meat.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Follow local health department laws.
• Operational Excellence:
  • Use administration forms to maintain an inventory of all meat products and determine production levels.
  • Notify the Manager of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Properly maintain equipment according to the Equipment Maintenance manual.
  • Perform duty roster tasks.
