Sushi Chef

We are seeking a skilled Sushi Chef to join our culinary team at Moonlight Basin. As a Sushi Chef, you will be responsible for preparing high-quality sushi dishes for our guests, working closely with our Executive Chef to ensure exceptional culinary experiences.

• Prepare a variety of sushi rolls, sashimi, and nigiri dishes with precision and creativity.
• Create a rich sushi menu with various main ingredients and raw fish.
• Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi, and soy sauce, when appropriate.
• Manage food prep activities, such as boiling rice.
• Prepare food items for guests using a quality and pre-determined method in a timely and consistent manner.
• Set up workstation based on menu items, banquet event orders, and specials, ensuring all stations are ready for the shift.
• Always follow proper sanitation and safety guidelines.
• Keep kitchen work and storage areas clean and organized.
• Inspect all food products to ensure proper appearance, colors, and appeal.
• Ensure all food is stored in proper containers in refrigerators and freezers, to maintain freshness.

• Two years of previous restaurant cooking experience in a high-end restaurant preferred.
• Minimum of one year of sushi preparation experience.
• Intermediate understanding of professional cooking and knife handling skills.
• Ability to work effectively in a high-energy and busy environment.
• Ability to read recipes and follow directions.
• Ability to handle pots, pans, and kitchen equipment efficiently and safely.
• Able to demonstrate culinary techniques such as cutting, cooking principles, plate presentations, and proper sanitation and safety practices.
• Ability to make sound and rational decisions in performance of duties.
