Job Overview

POSITION SUMMARY

The Culinary Specialist is responsible for the safe preparation of food items, adhering to menu specifications and established recipes, ensuring exceptional presentation for guests across all dining venues.

KEY RESPONSIBILITIES

  • Create and manage a daily preparation list.
  • Compile written daily orders for food items.
  • Demonstrate versatility by working across various stations: sauté, broiler, appetizers, pantry, pasta, and grill.
  • Exhibit proficiency in various knife techniques.
  • Collaborate with team members to cook, prepare, plate, and assemble food for all outlets.
  • Follow procedures to manage food costs and maintain quality standards.
  • Complete assigned side tasks, including restocking and maintaining workstation supplies.
  • Ensure cleanliness and proper setup of the station before, during, and after shifts.
  • Adhere to safety protocols and maintain cleanliness throughout the cooking process.
  • Comply with health codes and handwashing guidelines.
  • Prepare all food items according to standardized recipes to guarantee consistency.
  • Utilize appropriate cooking techniques such as broiling, sautéing, braising, and poaching.
  • Initiate the development of daily specials.
  • Demonstrate the ability to create compound sauces and derivatives of mother sauces, including Beurre Blancs.
  • Possess comprehensive knowledge of three cooking stations, with familiarity in two additional stations.
  • Understand the Material Safety Data Sheet (MSDS) program.
  • Prepare written requisitions for supplies and food items necessary for production.

WORKING CONDITIONS AND ESSENTIAL FUNCTIONS

The ideal candidate must be able to:

  • Consistently present a positive and professional image.
  • Read and apply mathematical skills for recipes and measurements.
  • Organize and delegate tasks effectively.
  • Work in varying temperature conditions, from hot to cold.
  • Lift and transport items weighing up to 300 lbs. as part of regular duties.
  • Prioritize tasks and meet deadlines efficiently.
  • Perform physical tasks including bending, stooping, kneeling, standing, and walking significant distances.
  • Recall recipes from memory accurately.
  • Gather all necessary ingredients for recipe execution.
  • Execute all tasks with high accuracy and speed.

QUALIFICATIONS

A minimum of two years of experience in food preparation and culinary knowledge is required. Candidates must be capable of performing all cooking responsibilities in a fast-paced environment with a sense of urgency. Completion of any necessary classes or certifications mandated by local regulations is also required.

REGULATORY AND COMPLIANCE RESPONSIBILITIES

All team members are expected to comply with the following:

  • Participate in mandatory training sessions provided by the organization.
  • Perform duties in accordance with local laws and regulations.
  • Ensure that minors are not permitted in restricted areas or allowed to consume alcohol or tobacco products.
  • Maintain knowledge of relevant ordinances, regulations, and policies related to the department.
  • Refer to Internal Control Procedures and Policy Manuals for guidance.
  • Report any illegal activities to the appropriate authorities.
