Job Summary:
The Meat Cutter plays a crucial role in ensuring the quality and quantity of meat products meet the highest standards. As a key member of the food production team, the Meat Cutter is responsible for cutting meat according to product specifications and time standards.
Key Responsibilities:
- Food Production:
- Cut meat to exact specifications and meet time standards to ensure optimal product quality and quantity.
- Implement and follow the buffet production system to guarantee quality and shelf life compliance.
- Rotate and stock cut and boxed meat to ensure freshness and minimize waste.
- Organize and maintain the Meat Cooler in accordance with approved food safety guidelines.
- Cleanliness:
- Sanitize all surfaces between production of chicken and other meats to prevent cross-contamination.
- Identify and remove spoiled meat by recognizing signs of spoilage, such as stickiness, slickness, or unpleasant odors.
- Clean and sanitize the meat room according to cleanliness, service, and quality standards.
- Comply with local health department regulations and guidelines.
- Operational Excellence:
- Utilize administration forms to maintain accurate inventory of all meat products and determine production levels.
- Notify the Manager of any discrepancies in product or equipment.
- Perform opening and closing administrative procedures.
- Maintain equipment according to the Equipment Maintenance manual.
- Complete duty roster tasks as assigned.
