Position Overview:


The Evening Culinary Specialist is responsible for ensuring seamless service from the kitchen through quality assurance, training of kitchen staff, and maintaining high sanitation standards.


Key Responsibilities:


Verify all dishes against recipe specifications, ensuring adherence to use records for all served items while presenting food in an efficient and high-quality manner.

Oversee the kitchen setup prior to meal services to guarantee optimal efficiency during service periods.

Ensure proper maintenance of kitchen equipment and adherence to the 'clean as you go' policy.

Prepare consistently high-quality dishes following recipe guidelines and portion standards as directed by servers.

Initiate the preparation of food items ahead of time, ensuring not to exceed estimated requirements.


Label all food containers and rotate stock according to standard operating procedures, ensuring perishables are stored at appropriate temperatures.

Monitor inventory levels for shift requirements, determining necessary preparation, freezer pulls, and kitchen setup.

Identify any out-of-stock items or potential shortages.

Assist in maintaining a well-stocked buffet.

Return all unused food items to designated storage areas, ensuring proper labeling and dating of perishables.


Assist in developing strategies to address any food cost issues; manage food waste, loss, and usage according to standard operating procedures.

Prepare consistently high-quality dishes following recipe guidelines and portion standards as directed by servers.

Qualifications:
Education/Training

High school diploma or equivalent.

Experience


Minimum of one to two years of relevant experience in a similar role within this organization or other establishments.

Knowledge/Skills

Understanding of culinary practices and kitchen procedures necessary for performing diverse analytical tasks.

Physical Requirements

Lifting, pushing, pulling, and carrying:
This position regularly involves lifting food cases and equipment weighing up to 70 lbs. Items include food and small tools - approximately 75% of the time.

Periodic climbing is required.

Bending is necessary when utilizing lower ovens for cooking, occurring 5-10 times daily.

Mobility - full range of motion and the ability to navigate 30-50 feet regularly throughout the day.

Continuous standing - during preparation, service hours, or expediting, typically throughout the day.

Must be able to hear equipment timers and communicate effectively with team members.

Must possess the ability to visually assess that products are prepared correctly. Lifting, pushing, pulling, and carrying.

Must be able to comprehend and follow verbal/written instructions and communicate effectively both verbally and in writing.

Work Environment

Indoors 95% of the time during an 8-hour shift. Freezer temperatures can reach -10 degrees. On the front line, temperatures may exceed 100 degrees.
