Overview
ASM Global, a premier entity in the management of public assembly venues, is seeking a dedicated Head Culinary Specialist. This role is pivotal in ensuring the timely and consistent preparation of high-quality meals in a fast-paced and dynamic kitchen environment.

Compensation: $30 per hour

Key Responsibilities:
As a Head Culinary Specialist, your duties will include but are not limited to:

  • Establishing cooking stations and gathering all necessary ingredients for menu preparation.
  • Creating a diverse range of dishes, including meats, seafood, poultry, vegetables, and cold items.
  • Ensuring proper labeling and dating of food items for optimal storage.
  • Maintaining adequate stock levels of food products to facilitate smooth service.
  • Contributing to the cleanliness, sanitation, and organization of the kitchen and storage areas.
  • Adhering to standard portion sizes, cooking techniques, quality benchmarks, and kitchen policies.
  • Utilizing food preparation equipment according to manufacturer guidelines.
  • Executing proper kitchen closing procedures and following the designated checklist.
  • Maintaining a sanitary workspace, including coolers and storage areas.
  • Assisting with additional tasks as directed by the Executive Chef or Sous Chef.
  • Preparing meals for patrons with dietary restrictions or allergies.
  • Ensuring all storage areas are organized and that products are stored correctly.
  • Consistently applying safe and hygienic food handling practices.
  • Returning used food preparation tools to their designated locations.
  • Supporting all tasks assigned by the Executive Sous Chef.

Qualifications:
To excel in this position, candidates must meet the following criteria:

  • Must be at least 18 years of age.
  • High school diploma or GED is required.
  • Current ServeSafe certification is mandatory.
  • Ability to follow directions and perform tasks effectively.
  • A minimum of three years of experience in food service and meal preparation.

  • Capability to produce high-quality food in a fast-paced setting.
  • A positive demeanor and a strong focus on customer service.
  • A solid work ethic and understanding of sanitary practices.
  • Adherence to grooming and dress code standards.

  • Attention to detail in all aspects of food preparation.

Additional Requirements:
Flexibility to work various hours, including evenings, weekends, and holidays is essential.

Physical Demands:
The physical requirements for this role include regular movement throughout the facility, standing for extended periods, and the ability to lift up to 25 lbs. to waist height. The position may involve working indoors or outdoors based on event needs, with exposure to loud sounds during certain events.
