Position Overview:
The Food Services Supervisor is accountable for overseeing daily culinary operations, which encompass patient services, retail management, procurement, food preparation, and distribution. This role ensures adherence to health regulations and safety standards, acts as a liaison with external suppliers, manages food program operations, and supports the Manager in comprehensive food service planning.
Key Responsibilities:
- Oversee all daily departmental operations and food programs, coordinating food preparation for patient tray assembly and delivery, while managing the distribution of food and supplies to various areas.
- Direct menu development to guarantee quality, therapeutic appropriateness, and cost-effectiveness. Create menu cycles for retail services and adjust selections to meet dietary requirements.
- Prepare training materials for staff development and conduct educational sessions. Orient and train employees on responsibilities including food preparation, serving activities, recipe standardization, cashiering, infection control, fire safety, and cleanup in accordance with Hazard Analysis and Critical Control Point (HACCP) Guidelines.
- Initiate and maintain contracts with external vendors, evaluating pricing, arranging discounts, negotiating terms, soliciting bids, and ensuring compliance with product quality standards.
- Generate statistical reports, analyze data, and track trends. Assess outcomes and formulate action plans for departmental improvement, identifying participants, performance indicators, data collection tools, and evaluation methods to ensure timely corrective actions.
- Develop and implement departmental policies and procedures, which may include tray-line operations, production, diet office management, retail services, procurement, portion control, and temperature management.
- Maintain food service safety programs, conducting regular inspections and accurately documenting and investigating incidents.
- Establish quality standards for customer satisfaction and develop corrective action plans based on feedback.
- Implement a comprehensive HACCP program to maintain high sanitation levels and compliance with regulatory agencies, conducting routine inspections of production areas and equipment.
- Ensure cost-effectiveness by monitoring cash register balances and daily sales, evaluating equipment specifications, participating in food specification formulation, and conducting periodic inventories to guarantee adequate supply levels.
- Handle human resources responsibilities for staff, including performance coaching, conducting reviews, and fostering overall morale. Recommend hiring, compensation adjustments, promotions, corrective actions, and terminations.
Licensure, Registration, and/or Certification Required:
- ServSafe Food Handler certification issued by the National Restaurant Association must be obtained within one year.
Education Required:
- High School Diploma.
Experience Required:
- Typically requires three years of experience in food service operations and food preparation, including service techniques, cashiering, sanitation standards, and/or general and modified diets in a large hospital or hotel/restaurant environment, with experience in a lead or senior role.
Knowledge, Skills & Abilities Required:
- Intermediate proficiency in Microsoft Office software (Word, Excel, PowerPoint) or similar applications, electronic mail, and Internet.
- Excellent verbal, written, and interpersonal communication skills to effectively engage with a diverse range of internal and external stakeholders.
- Strong leadership abilities, including problem-solving and decision-making skills.
- Self-directed, organized, and detail-oriented.
- Demonstrated capability to perform arithmetic calculations.
