Nutritional Services Manager

Role Summary:
Oversees the culinary operations within the facility, ensuring optimal food service for all residents. This includes managing kitchen staff, maintaining food inventory, overseeing kitchen equipment, and addressing routine nutritional needs.
Ensures accurate documentation of dietary intake and any resident-specific dietary concerns. Collaborates with a clinical dietitian to enhance the management of the dietary department. Guarantees compliance with all relevant state, federal, and local regulations. Conducts training sessions for dietary staff and coordinates monthly schedules.
Key Responsibilities:
- Engages with new residents and their families to gather individual dietary preferences.
- Maintains updated dietary records by participating in care conferences and regularly visiting residents.
- Designs menus and supervises the preparation and serving of meals to residents.
- Establishes basic dietary plans in accordance with nutritional standards and determines portion sizes, considering food availability, seasonal preferences, and cost-effectiveness.
- Adjusts meal quantities and contents to accommodate the varying nutritional needs of residents.
- Reviews the quantity, quality, temperature, and presentation of food prior to serving.
- Conducts regular assessments with the Director of Nursing to evaluate the acceptability of meals served.
- Monitors leftover food to identify preferences and improve menu offerings.
- Inspects food, supplies, and equipment upon delivery to ensure compliance with specifications, while maintaining records and compiling reports on meal service, menu analysis, food costs, and inventory levels.
- Recommends modifications to procedures for enhanced operational efficiency and trains staff accordingly.
- Documents dietary discussions for each resident involved in care conferences and notes any changes in dietary patterns.
Required Qualifications:
- Certification as a Dietary Manager. If not certified upon hire, enrollment in a certification course is required within 90 days and completion within 18 months.
- Preferred experience of 2 years in food supervision within long-term care settings.
- Proficiency in computer skills is advantageous.
- Strong leadership and communication abilities.
