Role of the Culinary Specialist: The Culinary Specialist plays a vital role in food preparation, which includes tasks such as chopping, mixing, sautéing, frying, grilling, and baking. This position requires a thorough understanding of diverse cooking techniques, ingredients, and culinary traditions. The ideal candidate will excel in a dynamic, high-pressure environment, with a strong focus on detail and compliance with hygiene and safety protocols. The Culinary Specialist will collaborate with the kitchen team, including Prep Cooks and Lead Cooks, and will report directly to the Chef de Cuisine.

Key Responsibilities:

  • Advanced Food Preparation: Demonstrates expertise in preparing a variety of dishes and ingredients, including meats, seafood, and vegetables, utilizing various cooking methods.
  • Quality Assurance: Ensures that all dishes meet exceptional standards for flavor and presentation, making necessary adjustments to maintain consistency.
  • Kitchen Organization: Maintains an orderly and efficient kitchen environment, managing workstations and ensuring that all necessary ingredients and tools are available.
  • Training and Mentorship: Assists in onboarding new kitchen staff, providing guidance and support to ensure high culinary standards are upheld.
  • Inventory Oversight: Implements FIFO procedures, manages stock levels, and communicates any shortages to the chef.
  • Health and Safety Standards: Adheres to strict health and safety regulations, ensuring compliance with all relevant guidelines.
  • Equipment Management: Responsible for the proper use and upkeep of kitchen equipment, reporting any issues promptly.
  • High-Volume Cooking: Efficiently handles large orders while maintaining quality and speed, particularly during peak service times.
  • Team Collaboration: Works closely with fellow cooks and the Chef de Cuisine to foster a cooperative kitchen atmosphere.
  • Workstation Maintenance: Keeps all kitchen areas, including storage and preparation spaces, clean and organized.
  • Food Safety Compliance: Follows strict food safety protocols to ensure a safe cooking environment.

Additional Requirements:

  • 3+ years of culinary experience, preferably in high-volume settings.
  • Food handler certification is required.
  • A culinary degree is preferred but not mandatory.
  • High school diploma or GED is preferred.
  • Ability to lift, push, and pull up to 50 lbs, and stand for extended periods.
  • Flexibility to work weekends and holidays as needed.
