Overview
The Culinary Specialist plays a vital role in supporting the Dietary Manager in executing essential functions. In the absence of the Dietary Manager or Assistant, this position assumes leadership responsibilities. This role involves providing oversight and assistance to all food service personnel during shifts while ensuring compliance with food safety regulations. The Culinary Specialist is tasked with preparing nutritious and visually appealing meals that adhere to dietary guidelines, following established practices and menus.
KEY RESPONSIBILITIES:
- Prepares and serves meals with attention to detail.
- Creates food items and desserts for scheduled snacks.
- Prepares meal substitutions and ensures they are posted in designated areas.
- Conducts inspections of food quality, quantity, temperature, and presentation prior to serving.
- Monitors leftover food items in storage daily, discarding any outdated products.
- Maintains proper food temperatures: hot items at 140 degrees, cold items at 45 degrees, and serving temperatures at 120 degrees for hot and 50 degrees for cold.
- Records food temperatures daily and addresses any noted concerns.
- Prepares meals according to established timelines.
- Adheres to posted meal delivery schedules.
- Possesses knowledge of food preparation techniques as per planned menus.
- Understands basic cooking principles and kitchen equipment operation.
- Demonstrates precision in measuring and portioning food products.
- Maintains a professional appearance by wearing the appropriate uniform and hair covering.
- Fosters positive relationships with residents, families, and team members.
- Makes independent decisions as necessary.
- Effectively manages emergency situations.
- Participates in required training sessions and workshops.
- Keeps current food handler certification.
- Ensures all cooking equipment and utensils are cleaned and stored properly.
- Communicates effectively with supervisors and other staff members.
- Performs additional duties as assigned.
EDUCATION REQUIREMENTS:
High School Diploma or equivalent is required.
Ability to read and write is essential.
Previous experience in a culinary role is preferred.
